Preheat oven to 200°C. Place the skewers on a baking tray lined with parchment paper. Bake for 12-15 minutes, turning halfway through, until the bacon is crispy and the liver is just cooked through - be careful not to overcook as liver can become tough. Alternatively, grill under high heat for 8-10 minutes, turning frequently. Serve hot with a squeeze of lemon. The rich liver pairs perfectly with the salty, crispy bacon.
