For classic Steak and Kidney Pie: Remove the white core and soak kidneys in milk for 1-2 hours. Dice kidneys and beef chuck into 2cm cubes. Brown meat in batches, then sauté onions until soft. Return meat to pan, add flour, beef stock, Worcestershire sauce, and thyme. Simmer for 1.5 hours until tender. Transfer to a pie dish, top with puff pastry, brush with egg wash, and bake at 200°C for 25-30 minutes until golden. A British pub classic!
