For classic Maltese Fwied: Slice liver thinly and season with salt and pepper. Dredge in flour and pan-fry in olive oil over high heat for 1-2 minutes per side - do not overcook or it becomes tough. Serve with caramelized onions and a splash of red wine vinegar. Pairs perfectly with mashed potatoes.
