For traditional Maltese Ilsien tal-Baqar: Rinse the tongue and place in a large pot. Cover with water and add onion, carrots, celery, bay leaves, and peppercorns. Simmer for 3-4 hours until tender. Remove and peel the outer skin while still warm. Slice and serve warm with capers, olives, and a drizzle of olive oil. Alternatively, slice and pan-fry with garlic and parsley. A beloved Maltese Sunday lunch tradition.
