For the authentic German method: bring a pot of beer (lager works best) to a gentle simmer with sliced onions, a bay leaf, and a few black peppercorns. Poach the bratwurst in the beer for 10 minutes - this ensures they are cooked through and incredibly juicy. Remove and finish on a hot grill or griddle pan for 3-4 minutes, turning until the skin is golden and blistered all over. Serve in a soft white roll with German mustard, sauerkraut, and crispy fried onions. For a one-pan dinner: slice the bratwurst into thick rounds and pan-fry until browned. Add cubed potatoes, sliced peppers, and onions. Season with caraway seeds and paprika. Roast at 200°C for 25 minutes until everything is golden and crispy. Finish with a dollop of whole grain mustard and fresh parsley.
