The night before, generously apply our Verstegen Brisket spice rub all over the meat and refrigerate uncovered. Bring to room temperature before cooking. Smoke at 110°C for 8-12 hours until internal temp reaches 95°C, or braise in oven at 150°C for 4-5 hours. Wrap in foil or butcher paper halfway through to retain moisture. Rest for at least 30 minutes before slicing against the grain. Serve with coleslaw, pickles, and crusty bread for the perfect BBQ experience.
