Fresh chicken gizzards, a traditional delicacy packed with flavour. Excellent slow-cooked, stir-fried, or braised.

Clean the gizzards thoroughly and trim any excess fat or membrane. Slice in half for faster cooking. For a delicious stir-fry: boil the gizzards in salted water with a bay leaf for 45 minutes until tender, then drain well. Heat sesame oil in a wok over high heat. Add sliced onions and green peppers, stir-fry for 2 minutes. Add the gizzards and fry until golden and slightly crispy on the edges. Season with soy sauce, a splash of rice vinegar, minced garlic, and a pinch of chilli flakes. Finish with a sprinkle of sesame seeds. For a traditional slow-cooked stew: brown the gizzards in olive oil, add onions, garlic, tomato paste, and chicken stock. Simmer on low heat for 1.5-2 hours until meltingly tender.
