For barbecue or grill: Preheat to medium-high heat. Grill the kebabs for 12-15 minutes, turning every 3-4 minutes to cook evenly on all sides. The chicken should be golden with slight char marks and completely cooked through. For oven cooking: Preheat to 200°C, place on a lined baking tray and cook for 18-20 minutes, turning once halfway through. The internal temperature of the chicken should reach 75°C. Serve with fluffy rice or warm pitta bread, a crisp green salad, and your choice of dipping sauce - garlic mayo, tzatziki, or sweet chilli sauce all work wonderfully. Squeeze fresh lemon over the kebabs just before serving.
