Cooking Instructions

For a hearty chicken neck vegetable stew: season the necks generously with salt, pepper, and paprika. Brown them in olive oil in a heavy-bottomed pot until golden on all sides. Remove and set aside. In the same pot, sauté diced onions and garlic until softened. Add tomato paste and stir for a minute, then pour in crushed tomatoes and chicken stock. Return the necks to the pot and bring to a simmer. After 30 minutes, add chunky pieces of carrot, cauliflower florets, broccoli, green peppers, and any other seasonal vegetables. Season with cumin, a pinch of chilli flakes, and a bay leaf. Cover and simmer on low heat for another 45 minutes to 1 hour until the necks are fall-off-the-bone tender and the vegetables are cooked through. The sauce should be rich and thick. Garnish with fresh coriander and serve in deep bowls with crusty bread to soak up the delicious sauce.
