Season generously with salt, pepper, and fresh herbs - rosemary, thyme, and bay leaves work beautifully. Sear all sides in a hot pan until deeply browned. Place in a roasting pot with onions, garlic, carrots, and celery. Add beef stock and red wine. Braise at 160°C for 3-4 hours until fork-tender. The connective tissue breaks down into rich, flavorful gelatin. Serve sliced with creamy mashed potatoes and steamed broccoli. Try our Verstegen Mushroom or Pepper sauce for an extra touch of richness.
