To prepare as glazed gammon: First cure the ham by soaking in brine (water, salt, sugar, peppercorns, bay leaves) for 3-5 days in the refrigerator. Rinse well and place in a large pot, cover with cold water, add an onion, carrots, and celery. Bring to a boil, then simmer gently for 20 minutes per 500g. Remove from water, score the fat in a diamond pattern, and stud with cloves. Brush generously with a glaze of honey, mustard, and brown sugar. Roast at 180°C for 30-40 minutes, basting frequently, until beautifully caramelized and golden. Rest for 15 minutes before carving. A stunning centrepiece for Christmas or Easter.
