Cooking Instructions

For sausage and peppers (the classic Italian-American dish): slice 2 bell peppers and 2 onions into thick strips. Heat olive oil in a large pan and brown the sausages on all sides over medium heat for about 8 minutes. Remove and set aside. In the same pan, saute the peppers and onions with a pinch of salt until softened and slightly charred. Add 3 crushed garlic cloves, a splash of white wine, and a teaspoon of dried oregano. Return the sausages to the pan, cover, and simmer for 15 minutes until cooked through. Serve in crusty Italian rolls or alongside creamy polenta. For Italian sausage pasta: remove casings, crumble into a pan, and brown. Add garlic, chilli flakes, tinned San Marzano tomatoes, and fresh basil. Simmer 25 minutes and toss through orecchiette with a drizzle of good olive oil and pecorino cheese.
