A stunning centrepiece made from two frenched lamb racks interlocked with their bones crossed like swords. The ultimate showstopper for special occasions.

Ask your butcher to french the racks for you. Season both racks generously with salt, pepper, and Verstegen Lamb Seasoning. Sear each rack in a hot pan with olive oil until golden on all sides. Prepare a herb crust by mixing fresh breadcrumbs, chopped parsley, rosemary, minced garlic, and Dijon mustard. Press the crust onto the fat side of each rack. Interlock the two racks with the bones crossing over each other to form the guard of honour shape. Tie together with butcher's twine to hold the shape. Fill the cavity between the racks with a stuffing of sautéed onions, herbs, and breadcrumbs if desired. Roast at 200°C for 25-30 minutes for medium-rare or 35 minutes for medium. Rest for 15 minutes before carving. To serve, cut down between the bones and present on a platter with roasted root vegetables and a red wine jus.
