Butterfly the shoulder or ask your butcher to do it for you. Prepare a herb stuffing by mixing fresh parsley, garlic, and Verstegen Lamb Seasoning with olive oil. Spread the stuffing over the inside of the shoulder, roll tightly, and tie with butcher's twine. Rub the outside generously with Verstegen Rosemary & Thyme blend, salt, pepper, and olive oil. Sear in a hot pan until browned on all sides. Place in a roasting tin and roast at 160°C for 4-5 hours until the meat is beautifully tender and pulls apart easily. Remove from oven and rest for 20 minutes before slicing. The herb stuffing creates a stunning spiral when carved.
