Cooking Instructions

For the traditional Maltese way: prick the sausages lightly with a fork. Grill on a charcoal barbecue over medium coals for 12-15 minutes, turning frequently until deeply golden and cooked through - the smoky char is essential. Serve with crusty Maltese bread (hobz), bigilla (broad bean dip), and a fresh tomato and onion salad dressed with olive oil and wine vinegar. For a classic Maltese pasta sauce: remove the casing and crumble the sausage meat into a hot pan with olive oil. Brown well, then add crushed garlic, a tin of peeled tomatoes, and a splash of red wine. Simmer for 30 minutes until rich and thick. Toss through penne or rigatoni with fresh basil and grated Parmesan. Also excellent baked in the oven at 190°C for 20-25 minutes, served with roasted potatoes and seasonal vegetables.
