Remove from the fridge 20-30 minutes before cooking. Preheat your grill or BBQ to high heat. Grill for 3-4 minutes per side for medium-rare. Rest for 5 minutes before serving to allow the juices to redistribute. Serve with chimichurri, roasted garlic butter, or simply on its own with a crisp green salad.
