For oven: Preheat to 150°C. Wrap the rack tightly in foil and slow-roast for 2.5-3 hours until the meat is tender and pulling away from the bone. Unwrap, brush generously with BBQ sauce, and place under the grill or on the BBQ for 8-10 minutes for a caramelised finish. For BBQ: Cook low and slow on indirect heat for 2-2.5 hours, then finish directly over the coals. Rest 5 minutes before cutting into portions.
