Spare ribs have more meat than baby back ribs and are packed with flavour, especially when slow-cooked with our marinade caramelising into every crevice. For oven: Preheat to 150°C. Wrap the ribs tightly in foil and slow-roast for 2.5-3 hours until tender. Unwrap, brush with extra BBQ sauce if desired, and grill for 8-10 minutes until caramelised. For BBQ: Cook on indirect heat for 2-2.5 hours, then finish over direct heat for 10 minutes. Rest 5 minutes before cutting into portions.
