Remove from the fridge 20-30 minutes before cooking. Preheat your grill or BBQ to high heat. Grill for 3-4 minutes per side for medium-rare, 4-5 minutes for medium. Rest for 5 minutes before slicing against the grain. Serve with a crisp salad, grilled vegetables, or chunky chips.
