For Mexican sausage tacos: remove the casings and crumble the sausage meat into a hot, dry pan. Fry over high heat, breaking it up with a wooden spoon, until deeply browned and crispy at the edges - about 8-10 minutes. Add a squeeze of lime juice and a pinch of ground cumin. Warm soft corn tortillas and fill with the sausage meat, diced avocado, pickled red onions, fresh coriander, and a drizzle of sour cream. For a breakfast hash: dice potatoes and fry until golden. Add crumbled Mexican sausage, diced peppers, and onions. Cook until everything is crispy. Make wells in the hash and crack eggs into them. Cover and cook until the eggs are set. Serve with warm tortillas and hot sauce. Also brilliant in quesadillas with melted cheese and jalapenos.
