Trim any fat and slice into thin strips. Marinate in olive oil, garlic, cumin, and paprika for at least 1 hour. Grill over high heat for 2-3 minutes per side for medium-rare, or skewer and cook as anticuchos. Can also be braised low and slow with onions and red wine for 2 hours until tender.
