Remove outer membrane and white core. Soak in salted water for 30 minutes to mellow the flavor. For sautéed kidneys: slice thinly, pat dry, and flash-fry in butter with shallots and mushrooms for 2-3 minutes. Finish with a splash of cream and fresh parsley. Also excellent in traditional pies or deviled kidney dishes.
