Preheat oven to 180°C. Place the rolled turkey breast in a roasting tin. Rub with butter, season with salt and pepper, and cover loosely with foil. Roast for 1 hour 15 minutes to 1 hour 30 minutes (about 25 minutes per 500g), removing the foil for the last 20 minutes to allow the skin to brown and crisp up. The internal temperature should reach 75°C. Rest for 15-20 minutes before removing the string and carving into thick slices. Serve with cranberry sauce, roast potatoes, honey-glazed carrots, and rich turkey gravy made from the pan juices.
