Cooking Instructions

Preheat oven to 180°C. Place the stuffed thighs in a roasting tin, brush with melted butter or olive oil, and season with salt, pepper, and thyme. Roast for 50-60 minutes until the skin is golden and crispy and the meat is cooked through - the internal temperature should reach 75°C. Baste once or twice with the pan juices during cooking. Let rest for 10 minutes before removing the string and slicing into rounds. The dark meat stays incredibly moist and the stuffing absorbs all the wonderful juices. Serve with roasted root vegetables and a good gravy.
