Preheat oven to 190°C. Place the stuffed chicken in a roasting tin breast-side up. Rub the skin with softened butter and season generously with salt and pepper. Roast for approximately 1 hour 20 minutes to 1 hour 40 minutes (about 20 minutes per 500g plus 20 minutes extra). The skin should be deep golden brown and crispy. To test if it’s done, pierce the thickest part of the thigh - the juices should run clear with no pink. The internal temperature should reach 75°C. Rest the chicken covered loosely with foil for 15 minutes before carving. Make gravy from the pan drippings. Serve with roast potatoes, Yorkshire puddings, and your favorite vegetables.
