Cooking Instructions

Remove from fridge 1 hour before cooking to bring to room temperature. Preheat oven to 180°C. Place in a large roasting tin, rub generously with softened butter, and season with salt and pepper. Cover loosely with foil. Roast for approximately 3-3.5 hours for a 5kg turkey (about 35-40 minutes per kg). Remove the foil for the last 45 minutes to brown the skin. Baste every 30-40 minutes with the pan juices. The turkey is done when the internal temperature reaches 75°C in the thickest part of the thigh and the juices run clear. Rest for at least 30 minutes, covered with foil and a clean tea towel, before carving. This resting time is essential - it allows the juices to redistribute, making the meat incredibly moist.
