Boneless turkey thighs, rolled and tied with butcher netting for even cooking. Rich, dark meat with incredible depth of flavour - far more succulent than breast meat.

Remove from the fridge 30 minutes before cooking. Preheat the oven to 180°C. Season the rolled thigh generously with salt, pepper, and Verstegen Poultry Seasoning, rubbing it well into the netting. Heat a drizzle of olive oil in an ovenproof pan over medium-high heat and sear the joint on all sides until golden brown all over. Transfer to the oven and roast for 25-30 minutes per 500g until the internal temperature reaches 75°C. Rest for 15 minutes before removing the netting and carving into thick slices. The dark meat stays beautifully moist and is packed with flavour. For extra flavour, stuff the thigh before rolling with a mixture of sauteed onions, garlic, fresh sage, breadcrumbs, and lemon zest. Serve with roasted root vegetables and a rich gravy made from the pan drippings.
