Cooking Instructions

For a roasted turkey breast: season with salt, pepper, and dried sage. Wrap in streaky bacon rashers to keep the meat moist during cooking. Place in a roasting tin and roast at 190°C for 25 minutes per 500g until the internal temperature reaches 75°C. Rest for 10 minutes before slicing. For turkey escalopes: slice the breast horizontally into 1cm thick pieces. Place between cling film and flatten with a rolling pin. Dip in flour, then beaten egg, then breadcrumbs mixed with grated Parmesan and dried herbs. Pan-fry in butter and olive oil for 3-4 minutes per side until golden and cooked through. Serve with a squeeze of lemon and a rocket salad.
