Cooking Instructions

Season the thighs generously with salt, pepper, smoked paprika, and garlic powder. Heat olive oil in a large ovenproof dish and sear the thighs skin-side down until deep golden. Flip and add sliced onions, crushed garlic, a tin of chopped tomatoes, chicken stock, and a splash of white wine. Add a few sprigs of fresh thyme and a bay leaf. Cover tightly with foil and braise at 170°C for 1.5-2 hours until the meat is tender and pulls away from the bone. Remove the foil for the last 20 minutes to crisp the skin. The braising liquid becomes a rich, flavourful sauce. Serve with creamy mashed potatoes or roasted root vegetables.
