For crispy roasted turkey wings: cut each wing at the joints into 3 pieces. Season generously with salt, pepper, garlic powder, and onion powder. Toss with a drizzle of olive oil and spread in a single layer on a baking tray. Roast at 200°C for 45-50 minutes, turning once, until deeply golden and crispy. For a BBQ finish, brush with your favourite sauce in the last 15 minutes. For braised turkey wings: brown in a hot pan, then braise with onions, carrots, celery, tomato paste, and stock at 170°C for 2 hours until fall-off-the-bone tender. The braising liquid makes an incredible gravy.
