Remove the chicken from the fridge 1 hour before cooking. Pat dry with kitchen paper. Rub all over with softened butter, salt, pepper, and Verstegen Chicken Seasoning. Place a halved lemon and a few garlic cloves inside the cavity along with fresh thyme sprigs. Tie the legs together with butcher's twine. Place on a bed of roughly chopped onions, carrots, and celery in a roasting tin. Roast at 200°C for 20 minutes per 500g plus an extra 20 minutes. The chicken is done when the juices run clear and the internal temperature reaches 75°C at the thickest part of the thigh. Rest for 15-20 minutes before carving. Use the pan drippings to make a rich gravy.
